Burnt Caramel Ice Cream with Hawaiian Black Lava Salt

<= Previous | Get Recipe | Next =>

For those who are ready to make the leap into salt and ice-cream. Discovered by Sarah Miller on http://foodandpaper.blogspot.com/.

Ayurveda Notes (help)
Salt helps balance some of cooling qualities of cream. Ice cream usually contains raw eggs and is considered a bad food combination in ayurveda. Without eggs, this dish still provokes kapha. To mitigate damage for those who tend towards morning congestion, eat before sundown with cinnamon and cardamom.

Dosha: Vata- Pitta- Kapha+
Quality: Heavy, Oily
Taste: Sweet, Sour, Pungent

Hi Joseph,

I just received your comment on my blog. Thanks! Yeah, I've never put salt on my ice cream before this, but I've always liked salted nut ice cream flavors. Those, together with the bacon peanut brittle recipe I recently tried, convinced me that this would work. Any you can always leave the black salt off for those people not ready to make the salty-sweet leap.

I take a look at Pink of Perfection every now and again, and I haven't seen any posts about salted ice cream...could you link the reference for me?

Again, thanks for writing. Hope to see you around in the blogosphere again soon.
