Pumpkin Pizza with Fennel & Blue Cheese

Experiment with pumpkin sauce. Usually spiced with cinnamon and nutmeg, pumpkin is sweet, flavorful, and gentle. It works great on pizzas and with fennel. Blue cheese adds a sharp edge. For homemade pizza dough: put a bit of extra sugar in the dough and use 1/8c condensed milk per 1cup of dough. The pizza crust will be as tasty as the topping. Discovered in Asheville, NC.

Ayurveda Notes (help)
Spices help to balance the heavy, kapha provoking qualities of pumpkin. Condensed milk creates mucous, kapha beware! Blue cheese provokes pitta but is balanced by the pumpkin.

Dosha: Vata- Pitta- Kapha+ (pitta+ depending upon amount of blue cheese)
Quality: Heavy, Oily
Taste: Sweet, Sour, Pungent
