Ricotta Ravioli with Browned Poppy Seed Butter and Asparagus

From Cooking Light, "The contrast between the emerald asparagus and the black poppy seeds is striking atop the ravioli. If you can't find round gyoza skins, cut square wonton wrappers into circles with a 3-inch round cutter. Ricotta salata is a firm aged cheese with a sharp, slightly sweet flavor; substitute Parmesan if your supermarket doesn't carry it."

Asparagus helps to balance kapha but adding black pepper will help aid slow digestion. While fresh cheeses less than two days old pacify pitta, store bought cheeses generally provoke pitta because of sour, oily quality.

Taste: Sweet, Sour, Pungent
