Yoghurt Cheese w/ Pistachios, Sugar & Saffron

Experiment with aromatics and yoghurt cheese (hanging yoghurt from a cheesecloth overnight). The delicate aromatics of saffron make this dessert, called Srikanda in South Asia, food for the gods. Discovered in Albuquerque, NM.

Ayurveda Notes (help)
Fresh homemage yoghurt pacifies pitta but storebought or yoghurt older than three days is sour and pitta provoking. Pistachios are heating, provoking pitta but are balanced by sugar and saffron.

Dosha: Vata- Pitta+ Kapha+ (depending upon freshness of yoghurt, amount of nuts)
Quality: Heating, Heavy, Soft
Taste: Sweet, Sour
