Fried Tapioca Patties with Cilantro, Cumin, Peanuts

Experiment with “Sabudana Wada” – savory, fried tapioca patties from Maharastra, India. Crunchy on the outside, gooey on the inside. Discovered in Pune, India.

Ayurveda Notes (help)
Like all gooey foods, tapioca is mucilaginous, meaning mucous forming. Thus, sabudana aggravates kapha.

Dosha: vata- pitta- kapha+
Qualities: Slow, Slimy, Cooling
Tastes: Sweet, Salty, Pungent

Recipe - (Help with Cooking)
Makes 6 patties
Serving Size: 2 patties
Cooking time: 1 hour

1c tapioca balls
1½ c water
1/4c chopped cilantro
1tblsp cumin seeds fried

1tblsp jaggary, sucanat, or any unrefined sugar
1tsp salt
1tsp pepper
1tsp crushed ginger

Mix all ingredients except cilantro and boil until thick. Add cilantro. Take a ladle sized scoop from the pot and fry in a frying pan.
