Sprouted Mung Bean & Rice with Coconut Flakes

Taste the prana of alive food; experiment with sprouted mung beans. Colorful green of the bean balanced with white; coconut adds aroma and comfort to legumes/daals. Discovered in East Moriches, Long Island, NY.

Ayurveda Notes (help)
Relatively tridoshic; include ginger & black pepper for Kapha. Although legumes cause gas and constipation, mung beans are safer for vata dosha. Good source of protein.

Dosha: Vata- Pitta- Kapha-
Quality: Heavy, Smooth
Taste: Sweet, Pungent

Recipe - (Help with Cooking)
1/2c sprouted mung beans
1c white rice
1 1/2 c water
1 tblsp sucanat or any unrefined sugar
1 tblsp sunflower oil
1 tsp salt
1 tsp black pepper
1/2" piece of ginger, crushed in a mortar and pestle or chopped fine

Mix all ingredients together in a bowl. Bring to a boil. Reduce heat to low and simmer twenty minutes covered.
