The cold and heat of mint and chilis mixes together yet remains distinct, a seeming contradiction, a yin and yang. It creates an opening, a large expanse of space, cleansing the mind. Thoughts disappear in the vast space, and mind is receiving. What is it receiving? A cool breeze.
The softness and nutty flavor of the chili that has been roasted and mashed. Serranos too intense. I experiment with milder varieties of chili and mint. Then cool this spice combination in a lassi.
Discovered by a Tunisian Chef at the Pyramid Cafe, Santa Fe, New Mexico.

Pungent chilis stimulate circulation. Mint is a nervine and anti-spasmodic for the digestive tract.
Dosha: Vata+ Pitta+ Kapha-
Quality: Light, Sharp, Heating, Cooling, Dry, Rough, Subtle, Clear
Taste: Pungent, Bitter

Roast the chilis, mash, and mix in mint last. Otherwise, the essential oil in the mint will evaporate.
