Always soak dried fruits before eating. Dried fruits are generally sweeter and harder to digest than fresh ones. Take for example that one cup of apricots is equivalent to ¼ cup dried apricots. To reconstitute them, dried apricots must absorb at least 3 times their volume in water from the digestive tract. Gastric juices also have a harder time penetrating poorly chewed, dense dried fruits. For those with dry or otherwise weak digestion the sweetness of dried fruits quickly leads to fermentation, gas and bloating.
Drying apricots makes them sweeter. A ¼ cup of dried apricots contains more sugar than one cup fresh. Dried apricots are also higher in fiber. However, the drying process destroys some of the nutrients in fresh apricots.
Like most members of the rose family, eating too many seeds could cause cyanide poisoning.
