ayurvedic notes
Carrots are sweet, nourishing, easy to digest, and contain lots of fiber. They are ideal for babies and convalescing patients (i.e. those recovering from illness). Beta-carotene gives carrots their bright orange color. Beta-carotene is metabolized into vitamin A in the presence of bile salts in the small intestine. Vitamin A pacifies Pitta and improves vision. Carrots are ideal for high Vata in the liver.
