Better Health through Digestion with an Ayurvedic Diet

Since vinegar preserves vitamin C and others as well I have been trying to can more of my garden as pickles. I pickle many vegetables besides cucumbers. Garlic, onion, peppers, beans, zucchini, tomato salsa, and more have been pickled and with vinegar. Does a person give them up completely or adjust the intake?
