Spaghetti squash, when baked in the oven for about 40 minutes, offers a wonderful surprise when you slice it open. The flesh of the is squash easily removed with a fork in the form of stringy spaghetti! And you can prepare it just like spaghetti too, accenting it with a number of different sauces from simple tomato based marinara for a true Italian dinner, to a mixture of sauteed mushrooms, broccoli florettes and fresh basil and olive oil for a more creative, filling yet light dinner.
