ayurvedic notes
The saffron and cardamom in this treat help to make milk easier to digest. Kapha beware as this dessert is heavy, gooey and oily. However, cutting sugar and ghee in half will somewhat minimize these Kapha aggravating qualities. Use the recipe for gold milk as another option for this tasty dish, adding honey after cooking and cooling.

Rice pudding is sweet and delicious. It's also simple to make and liked by all. Traditional Indian rice pudding includes exotic spices like saffron and cardamom. It can be enjoyed both warm or chilled.

preparation
Grind saffron with a mortar and pestle. Soak in one tablespoon of the milk for ten minutes. Pour all ingredients except almonds into a single pot. Bring to a boil stirring constantly to prevent the rice and milk sticking to the bottom of the pot. Lower heat till a simmer. Continue stirring occasionally until rice softens and thickens. Keep covered. Garnish with roasted almonds just before serving. Enjoy!

are you sure its 8 cups of milk for 1/2 cup of rice...and a whole cup of sugar?

Yes - rice absorbs a lot of liquid. This rice pudding is more like a soup than a solid. You are always welcome to use less sugar - we do!
