Lemon & Rosewater Drink
A wonderful, uplifting substitute for iced tea inspired by a Tunisian drink with lemons and orange blossom water. We found this drink at Cafe Baraka of Central Square, Cambridge, MA. The owner is as zealous about her food as she is about Islam, encouraging even her western female patrons to wear the veil.

Rosewater is the water leftover from the production of rose essential oil. It has a wonderful rose fragrance. As Ayurveda students, we sprayed ourselves with rosewater mist on hot days to keep cool. Rosewater is available in most Indian and Middle Eastern grocery stores.

Rosewater has a pleasant cooling anti-inflammatory effect with mild astringency that tones tissues, including the digestive tract, and reduces permeability of the skin (useful for rashes and other skin conditions). Lemons cleanse the blood of impurities, aid digestion and quench thirst during the swooning dog days of summer. Although they are heating in the digestive tract, are a cooling astringent in the blood. Sour taste focuses a scattered mind and helps nudge consciousness back home to the heart.

Sticky peach fingers are the joyful and juicy abundance of summer. As peach stands pop up in your local neighborhood it's an opportunity to enjoy a healthy and refreshing dessert. Mint cleanses the palate. Peaches with blueberries and mint is best enjoyed as an appetizer 1 hr before a meal.

Blueberries cool the mind. Mint is a refreshing aromatic digestive clearing the stomach. Peaches are slightly warming and sour. The gush of hydrating juiciness that we enjoy in a peach comes from its slight sourness. Sour taste tingles the taste buds and, wipe your chin, causes a burst of saliva. Can you taste it?

Peaches & Digestive Juices

How do we know that a peach or any other food is a digestive? The same impulse that releases saliva cascades into the stomach. When we feel the surge of saliva in the mouth, its an indicator that all digestive glands have been stimulated. Sour even affects and keeps the colon juicy, not to mention it's fiber content encourages healthy elimination.
