Potatoes in Roasted Sesame & Coconut with Lime

Potatoes are high in potassium. Potassium is a diuretic. When Vata people eat potatoes they lose fluids. Potatoes are also drying because they have astringent taste.

Lime and salt nourish the kidneys and help them retain water. Lime and salt are an antidote to the dryness of potatoes.

Potatoes are heavy for digestion and have a high glycemic index which is good for people who need grounding. Potatoes make people feel sleepy and relaxed.
