It tastes like broccoli stems. It's crunchy. I use it diced up, in my porridge and my soups. Today I prepared a kim chee soup with some chopped pork, curly kale, endive, turnips, kohlrabi, ginger, long red chili pepper flakes with just enough water to cover all the ingredients in a large pot.
