Recipes with Pistachio: Pistachio Pancakes with Cardamom
Rich and aromatic, pistachio nuts offer a comforting satisfaction that nourishes both body and mind. Their buttery sweetness and subtle fragrance make them prized in Middle Eastern and Persian cuisines, where they adorn desserts and festive dishes alike. More than simple nourishment, pistachios bring steadiness and gentle strength, qualities that calm the nervous system and sustain energy throughout the day.
The healthy fats are the key to its grounding nature on the nervous system, promoting stability and emotional balance.
Moderation is essential. While pistachios are wholesome and tonifying, overindulgence may increase Phlegmatic (Kapha) or or Sanguine (Pitta-Kapha) types, or weigh down digestion. Enjoyed in mindful amounts, they nurture without dulling and provide lasting vitality.
A Warming Tonic
The seed is neutral-to-warm in temperature—milder than walnuts or pecans and with fewer tannins—yet sufficiently warming to slightly stimulate energy and vitality (raise Yang).
Its nutritive richness and subtle heat make it a strengthening tonic for deficient, Melancholic (Vata) constitutions.
When blended as a light milk or smoothie (rather than a heavy paste), pistachio can gently build digestive strength, support reproductive vitality, and act indirectly as a blood tonic.
Its dense, oily quality, and high fiber, also aids mild constipation.
Pistachio Hull
The hull possesses distinct medicinal virtues—bitter, sour, and antimicrobial—and was used in Greek medicine as a vulnerary, accelerating the repair of wounds and tissue.
Its astringent action complements the seed's richness, helping dry dampness and protect the skin's integrity.
Translation to Chinese Medicine
General tonic: Builds Qi, moistens, and harmonizes dryness.

Native to the dry hills of the Middle East and Central Asia, these little gems are among the world's oldest harvested nut trees, cultivated for over 9,000 years. When the Queen of Sheba declared pistachios royal food, legend says commoners were forbidden from growing them in her kingdom.
Pistachios journeyed along the Silk Road, carried by merchants from Persia to Greece and Rome, where they became a favorite of emperors. They later found their way to the Mediterranean, and eventually to California in the 1800s, where warm, arid valleys offered the perfect growing climate.
Each tree can live over 300 years, bearing thousands of nuts each harvest season.

Buying & Preparation
When buying pistachios, look for vibrant, naturally beige shells that are partially open, a sign of ripeness and proper roasting. Bright green kernels indicate freshness and good chlorophyll retention, while yellow or brown tones can mean age or over-roasting.
Choose unsalted varieties if you plan to use them in sweet dishes; salted or flavored versions are best reserved for snacking.
If buying in-shell, shake a few—light, rattling nuts may be shriveled inside. For shelled pistachios, check that the kernels are plump, with no signs of oiliness or rancid odor. Store them in an airtight container in a cool, dark place or refrigerate to preserve flavor and prevent oxidation. Because of their delicate oils, pistachios can go stale faster than other nuts, so buy smaller quantities and enjoy them fresh. For the highest quality, look for California, Iranian, or Turkish pistachios, which are known for their distinctive sweetness and brilliant green color.

Aggravating them weakens your body and causes imbalance.
By knowing which biocharacteristics are habitually imbalanced in your body, you will be able to identify and correct metabolic imbalances before you get sick.
Every biocharacteristic has an opposite which balances it (i.e. hot balances cold).
You restore balance by favoring diet and lifestyle choices that increase the opposite biocharacteristic.
In Ayurveda, oily refers to anything moistening. More specifically, oily refers to building substances that increases fat, or are themselves fatty. For example, sugar is Oily.
Taste is used to sense the most basic properties and effects of food.
Each taste has a specific medicinal effect on your body.
Cravings for food with certain tastes indicate your body is craving specific medicinal results from food.
Taste is experienced on the tongue and represents your body's reaction to foods.

Greek medicine recognizes 4 metabolic temperaments, Melancholic, Choleric, Sanguine, and Phlegmatic.
Has a hot and dry metabolic nature. Enthusiastic, vibrant and bright. In excess burns up fluids and ojas, irritable. Corresponds to high bilirubin in the blood that irritates and heats up the body and liver.
Cold and dry with a slow, variable or erratic metabolism. Colicky, tense. Withdrawn, pensive, anxious, and hesitant. Analytical, intelligent, detail oriented and creative. Prone to ojas depletion, dehydration, an overactive nervous system, and depression.
A Phlegmatic has a cold and wet metabolic nature. The coldness implies a slow metabolism, the moisture that you are well-nourished. Phlegmatics tend towards sluggishness and thickened fluids, including mucus.
A hot and oily nature with a moderate metabolism and a well nourished body makes Sanguine individuals vigorous, vivacious, outgoing and generous, and prone to impulsivity and self indulgence. Bullish and intense when out of balance.

An antioxidant is a molecule that inhibits oxidation. Oxidation is a chemical reaction that can produce free radicals that lead to a chain reaction causing damage or death to cells. Antioxidants terminate these oxidation reactions.
An herb that produces more blood cells in the body, or otherwise improves blood cell quality or hemoglobin content. Helpful for anemia and other types of deficiency.
Herbs that increase sexual arousal through various actions including increased circulation, relaxation, stimulation, or tonics that strengthen glandular health.

Tree nut allergy: Pistachios are tree nuts in the poison ivy family (Anacardiaceae), and can trigger IgE-mediated allergic reactions in sensitive individuals.
Oxalate Content & Kidney Stones: Pistachios contain moderate oxalate levels (~14-15 mg per ounce). High oxalate intake may contribute to calcium oxalate kidney stones in predisposed individuals. Should be limited in those with a history of nephrolithiasis.
Kidney Disorders / Hyperkalemia: Pistachios are rich in potassium (~290 mg per 1 oz serving). In people with chronic kidney disease (CKD) or impaired renal function, excess potassium can lead to hyperkalemia (dangerously high blood potassium).
