Ayurveda's signature healing dish is a simple yet dynamic bean and rice mixture called kitchari. Kitchari is a cleansing yet heart warming synergy of mung beans, basmati rice, and digestive spices. It is a complete protein, rich in fiber, cleansing to the digestive tract, and will act to bulk up stool for easier elimination. Those who avoid beans because of digestive difficulties need not avoid kitchari. Mung beans are among the easiest to digest legumes. They are antacid, helping to soothe fiery digestive conditions, and won't promote gas and bloating.
Why do spices work?Spices are the difference between a tasty meal and a bland one, and also the difference between healthy and poor digestion. A well-spiced dish digests better than a bland one. Just as spices stimulate the tongue, spices also stimulate the stomach. The tongue is a mirror of the digestive tract. Asafoetida, also called hing, is a sharp and heating spice that stimulates the tongue. As with all spices, hing not only makes food more interesting - it also has many health promoting qualities. Hing assists digestion, soothes spasms, and prevents gas. The spice's pungency stimulates the body to increase blood flow and gastric juices to the intestines. The extra juice and enhanced blood flow improves your digestion in the process. Reach for spices with enthusiasm, but remember: Too much spice is harsh and can leave a burning feeling the intestines. Be aware of your body's reaction to spices. Those with ulcers or inflammation will not benefit from an ingredient with the spicy strength of hing, but it is helpful for those with sluggish digestion.

Do I eat the Dal 3 times a day? Is there anything else that I eat or drink? How much is one serving. I have a big appetite. Thanks!
During a cleanse, it is generally recommended to eat the largest amount of kitchari at lunch time and a small amount during breakfast and dinner time. I suggest checking out our kitchari recipe for serving size: https://www.joyfulbelly.com/Ayurveda/recipe/Mung-Dal-Kitchari-Vata-Reducing/994 https://www.joyfulbelly.com/Ayurveda/recipe/Mung-Dal-Coconut-Cilantro-Kitchari-pitta-Reducing/221 https://www.joyfulbelly.com/Ayurveda/recipe/Mung-Dal-Kitchari-kapha-Reducing/995
When doing the cleanse, what else is recommended to eat/drink? Do you just eat the Kitchari? Can you have other fruits or veggies? Stick to water and herbal tea? Thanks in advance!
While doing a kitchari cleanse, you generally drink warm water and cumin, coriander, fennel tea if desired.
YogiTea classic is much better for liver cleansing with Kitchary -- i have a beautiful reciepe for it, too! And not so expensive -- Beant Kaur
My recipe says we can add any vegetables, along with the rice. Can you give examples, please? I just want to make sure I do this cleanse right. Thank you so very very much! :)
You can add vegetables appropriate for your dosha - root veggies like carrots for Vata and bitter greens like kale for Pitta and Kapha. Cilantro is great for everyone to top their kitchari with.
Well it really got things moving in my GI tract, got my lymphatic moving. I could only take for 1 day as I did have a major digestive cleasne. Didnot have desire to eat for days. Right now I am aware of foods that are not working for me. Csn a petdon just live on organic eggs an green veggies the rest of their life. That is what I a discovering right noenow
You can, but we recommend eating more variety than that.
