How to Make Acorn Squash Stuffed with Spicy Walnuts, Tempeh & Arugula

PREPARATION OF THIS HEALTHY RECIPE

1. Preheat oven to 350 degrees. Halve the 2 acorn squash and clean out the seeds. Wash and chop the leeks. Chop the walnuts.

2. Place the halved squash in a glass baking dish with 1 inch of water, flesh side down. Bake for 30 minutes, until tender.

3. While the squash is baking, crumble the tempeh into a bowl and cover with soy sauce, apple cider vinegar and minced garlic. Mix well and let marinade for 30 minutes.

5. In a large skillet, heat olive oil over medium heat. Sautee the spices in the oil for 10 seconds. Add the leeks and cook for 5 minutes stirring frequently. Remove the leeks from the heat and set aside.

6. Add the tempeh and marinade to the skillet. Cook for 15 minutes until golden and crispy.

7. Add leek and one bunch of arugula to the tempeh. Cook arugula until it is wilted.

8. Stuff arugula and tempeh mixture into each of the squash halves. Top with chopped walnuts.

9. Broil the squash halves until just browned, about 3-4 minutes.

Serve hot!

The 6 Tastes

Taste is used to sense the most basic properties and effects of food. Each taste has a specific medicinal effect on your body. Cravings for food with certain tastes indicate your body is craving specific medicinal results from food. Taste is experienced on the tongue and represents your body's reaction to foods. Sweet taste causes physical satisfaction and attraction whereas bitter taste causes discomfort and aversion. Kapha should use less sweet taste while Vata and Pitta would benefit from using more sweet taste. One of the first signs of illness is that your taste and appetite for food changes. The Three Doshas / Body Types

Ayurveda is a metabolic theory of medicine that explains individual health, tendencies, and disease patterns through the concept of doshas, which can be understood as your metabolic patterns and tendencies.
