PREPARATION OF THIS HEALTHY RECIPE

Berliner Kranzers are a traditional Immel family favorite. Grandma Immel taught us how to make these Norwegian Christmas cookies, passed down from her Grandma. She made hundreds of them every year. My parents made them when I was a boy too. We gave them to all the neighbors and friends. And, we ate a bunch too. Every year we eagerly awaited the day when my parents would make berliner kranzer! It's exciting to continue the tradition.

Making the dough is easy. Cooking them is easy too. The hardest part is rolling them. The dough has to slightly cool to roll them to 3/8" thickness. We had all 4 kids rolling them out so it only took us about two hours to make a batch. We think of it as entertainment and a main Christmas event so the night passes joyfully.

Even 2yr old Frenchie, littlest cookie maker in training, managed to dip one or two in the candy cane mix. The reward was all the bakers getting to eat a few.

Dough:
  • 1/2 inch less than a pound of butter
  • 4 egg yolks, save egg whites for dipping the cookies before baking
  • 4 cups refined spelt flour (whole spelt is possible but will affect the flavor)
  • 3/4 cup of sugar
Garnish Options:
  • Traditional: Pearl Sugar
  • Chopped almonds
  • Crushed candy cane

Cooking Instructions:
  1. Preheat the oven to 350 degrees F.
  2. Mix butter and sugar. Mix in the yolks. Mix in flour, a little at a time, until the dough sticks together (falls off your hands)
  3. Put the dough in the refrigerator over night. Or, to speed the process, roll it onto a cookie sheet and make a big pancake about 1/2" thick. Then put it in the fridge for a half hour or until the the dough is cool.
  4. When the dough is ready cut 1/2" strips and roll it into a 1/4-3/8" thick rope. Lift the end of the dough and loop it around so it looks like a Christmas wreath. Cut the dough and repeat. Work quickly while the dough is cool so it doesn't collapse.
  5. Dip the top (the side opposite the side that's going on the cookie sheet) into the egg whites and then into the pearl sugar, chopped nuts, or crushed candy cane.
  6. Put the cookies on an ungreased cookie sheet and bake in the oven for about 12 minutes.

TASTES

The 6 Tastes

Taste is used to sense the most basic properties and effects of food. Each taste has a specific medicinal effect on your body. Cravings for food with certain tastes indicate your body is craving specific medicinal results from food. Taste is experienced on the tongue and represents your body's reaction to foods. Sweet taste causes physical satisfaction and attraction whereas bitter taste causes discomfort and aversion. Kapha should use less sweet taste while Vata and Pitta would benefit from using more sweet taste. One of the first signs of illness is that your taste and appetite for food changes. The Three Doshas / Body Types
