PREPARATION OF THIS HEALTHY RECIPE
1. Place the pot of water on high heat and cover.
2. Chop garlic and parsley. Dice japapenos.
3. Once the water is boiling add the grits slowly while stirring to prevent them from sticking. Return to a boil then lower heat. Add remaining ingredients. Continue stirring every 30 seconds.
Remove from heat when grits are soft (about 10 minutes). Serve hot.

The verdict on grits is the following: If you eat them alone, they aggravate Vata/Pitta. But here the cheese balances the dry quality of the grits, making them okay. As it mentiones above, this recipe aggravates Pitta. Substituting cilantro for the jalapenos & parsley should do the trick, pacifying your Pitta.
