How to Make Chicken, Basil & Cashews in Pineapple Marinade Over Arugula

PREPARATION OF THIS HEALTHY RECIPE


  1. Blend 1/2 the pineapple in a blender. Chop the remaining pineapple into wedges. Add salt. Soak chicken & cashews in a casserole marinade overnight to soften and pre-digest it.
  2. The next day, preheat oven to 375. Chop and add green chilis. Cover. Do not use tinfoil to cover because the pineapple will oxidize it. Cook for 1.5 hours or until chicken is done.
  3. Meanwhile, cook Jasmine rice, or some suitable accompaniment.
  4. Serve over arguula. Garnish with bean sprouts.
