Chipotle Polenta With Thyme


How to Make Chipotle Polenta with Thyme

PREPARATION OF THIS HEALTHY RECIPE

1. Use vegetable stock instead of water for best results. Bring water and salt to a boil, then reduce heat to medium. Meanwhile, slice garlic. Heat butter in skillet, then add garlic. Sautee garlic for thirty seconds. Remove from heat before garlic starts to brown.

2. Add millet and ground chipotle to boiling water. Return to a boil, then reduce heat to simmer. Stir occaisonally to avoid millet sticking to the bottom of the pan. Remove from heat once grains are soft. Mash in the thyme, soaking up any extra oil with the cornmeal. Mash in the garlic butter, soaking up any extra oil with the cornmeal. Add thyme. Pour mixture into a greased pan and spread out evenly. Let cool and set.

3. Cut the millet into wedges and separate. Slice white onion into wedges and use as a garnish on wedges. Broil for 4-5 minutes until the edge starts to crisp. Mash parmesian and a bit of reserved fresh thyme into 2T olive oil as a garnish if desired.

Taste is used to sense the most basic properties and effects of food. Each taste has a specific medicinal effect on your body.
