Chop the beets and puree with equal quantity water in a blender. Add all ingredients into a pot and bring to a boil. Lower the heat and simmer for a half hour.

And blood building iron. Coconut balances Pitta. Pitta may want to replace black pepper with cloves, fennel seed or coriander powder. Cloves in small quantity have a sweet vipak (post digestive effect). Beets are actually friendly with many spices!

I usually puree before cooking - but after cooking might yield a 'smoother' soup result...good suggestion!
Juicy and delicious! But I might go a bit easier on the ginger next time - I had slight stomach discomfort just after eating it that I think may have been the heat of the ginger.
Tastes great, but I did pee red afterwards. I looked it up and it's called Beeturia. The articles said that Beeturia is harmless, but what about from an Ayurvedic standpoint?
Ayurveda does not consider beeturia to be concerning. It is a common side effect of eating beets.
