PREPARATION OF THIS HEALTHY RECIPE
1. This recipe is tasty with either canned or fresh corn. If you are using corn on the cob, fill a large saucepan 2/3 full of water and bring to a boil. Add corn and lower heat to simmer for 10-15 minutes, until corn is easily pierced with a fork. Remove from water and set aside.
2. Chop onions & rinse with boiling water to talk away the pungency. Seed & rinse 1/2 jalapeno and chop finely. Pick cilantro off the stems.
3. Dice bell peppers and cucumbers.
4. Gently mix all ingredients together in a bowl. Save a little cilantro to use as a garnish. Also, feel free to squeeze a little lime juice if you like for added brightness.
Serve chilled!
