Fava Bean Salad (foul Mudammas)


How to Make Fava Bean Salad (Foul Mudammas)

INGREDIENTS

PREPARATION OF THIS HEALTHY RECIPE

Prep:
Finely chop onion. Set aside 1/4c of onion to be used as a garnish. Rinse this 1/4c of onion under water to remove some of the sharpness. Mince garlic. Squeeze juice out of 1 lemon into a small dish. Use 6oz tomato paste or chop 2 tomatoes and boil until sauce is thick and reduced. Chop parsley.

1. Heat 1 tbsp olive oil and add 1/2c onion. Cook until tender, about 5 minutes. Add garlic and continue cooking for 10 seconds. Add beans and salt. If using canned beans, add bean liquor and cook for thirty minutes. If using dried beans, add 4c water, bring to a boil, then lower heat to simmer and cook uncovered for three hours or until beans are tender. The beans are done when they lack any hint of chaulkiness in the center. Remove beans and reduce bean liquor to 1c. Add beans back to pot.

2. Stir in cumin, lemon juice, tahini and tomato and continue cooking another 5 minutes.

3. Blend in food processor to desired consistency. Garnish with raw onion, chopped parsley, and remaining olive oil (1tbsp).

Serve warm or chilled.

TASTES

The 6 Tastes

Taste is used to sense the most basic properties and effects of food. Each taste has a specific medicinal effect on your body. Cravings for food with certain tastes indicate your body is craving specific medicinal results from food. Taste is experienced on the tongue and represents your body's reaction to foods. Sweet taste causes physical satisfaction and attraction whereas bitter taste causes discomfort and aversion. Kapha should use less sweet taste while Vata and Pitta would benefit from using more sweet taste. One of the first signs of illness is that your taste and appetite for food changes. The Three Doshas / Body Types
