Pecans are high in tannins, which are astringent and hot. Roasting or soaking pecans helps neutralize tannins and mellow the bitterness of pecans, making them more suitable for Vata types with constipation, gas, or bloating.
The sweetness and spices all help to make the pecans more digestible. Nuts are dry and difficult to digest. They must be thoroughly chewed. Vata body types should sip warm water when eating dry nuts to avoid dehydration and dry stomach syndrome.
Nuts are rich in fats and are an important tonic for the fall, when the body needs more fats in order to insulate against the dropping temperatures.

Try using dark Indian sugar, in this recipe. I've made it with the dark jaggery, with cinnamon and pinch of salt (and cayenne if you like). Then, optionally, a little bit of melted dark chocolate! So yummy! This version of jaggery is not commonly found, and called "refined" i.e. because it is so concentrated with minerals and less sweet. Ayurveda uses it for iron building after childbirth, when we can find it. Good quality Kholapur jaggery is also quite nice. Looking forward to trying your recipe, John. PS - I would change your recipe servings # though. Easy to eat 1/2 cup, seems pretty heavy dose!
