How to Make Grilled Eggplant Rolled with Tarragon & Sun Dried Tomato StuffingSERVINGS: 4 PREP TIME: 15 MINUTES COOK TIME: 40 MINUTES

PREPARATION OF THIS HEALTHY RECIPE
1. Bring water to a boil. Add 1 3/4 c water, brown rice, 2 tbsp olive oil, chopped sun dried tomato & salt. Simmer, covered on low heat until rice is soft (about 40 minutes)
2. Slice 1 eggplant into 1/4" strips. Mix remaining olive oil, salt & pepper in a small bowl. Baste eggplant with olive oil mixture. Grill until eggplant is soft. Remember worst sin of cooking is undercooked eggplant.
3. Roast & chop almonds. Chop a handful of tarragon. Create a mixture of tarragon, currants and chopped almonds with 1tbsp olive oil & a dash of salt.
3. Place a dollop of brown rice mixture onto cooked eggplant slice. Garnish with almond mixture and roll. Skewer with a toothpick to hold roll together. Squeeze a wedge of lemon on top.
