How to Make Instant Pot Kitchari

PREPARATION OF THIS HEALTHY RECIPE

1) Combine either 2 tsp of our Kitchari Spice Mix or the spices listed above in a small bowl. Add a small bit of water and mix to create a thick paste. Set aside.

2) Turn your Instant Pot on "Saute" mode - Add 2 tbsp of ghee to the pan and allow to melt as the pan heats up.

3) Once the ghee is completely melted, add your spice paste directly to the pan. Saute the spices with a wooden spoon, making sure that nothing is sticking to the bottom of the pan (this can affect the pressure cooking function of your Instant Pot!). Use a small bit of water to deglaze the pan if needed.

4) Add the split yellow mung beans and rice to your Instant Pot, and stir to coat well with the spice-infused ghee mixture!

5) Add 8 cups of water, put on your lid, and set the vent to the "Sealed position."

6) Pressure cook on high for 20 minutes.

7) "Quick release" steam.

8) Enjoy!

Topping ideas:
*For Vata: top with extra ghee/oil, extra salt.
*For Pitta: fresh cilantro, lime juice, and coconut flakes.
*For Kapha: fresh sprouts, a sprinkle of cayenne.

The 6 Tastes

Taste is used to sense the most basic properties and effects of food. Each taste has a specific medicinal effect on your body. Cravings for food with certain tastes indicate your body is craving specific medicinal results from food. Taste is experienced on the tongue and represents your body's reaction to foods. Sweet taste causes physical satisfaction and attraction whereas bitter taste causes discomfort and aversion. Kapha should use less sweet taste while Vata and Pitta would benefit from using more sweet taste. One of the first signs of illness is that your taste and appetite for food changes. The Three Doshas / Body Types
