How to Make Lemon Meringue Tapioca PuddingSERVINGS: 4

PREPARATION OF THIS HEALTHY RECIPE
Place tapioca in a medium mixing bowl with 2 cups of water and let stand overnight. Drain. Add milk, heavy cream, sugar, salt, vanilla extract and lemon zest. Cook for two hours stirring occasionally.
Meanwhile, whip the egg whites until foamy on medium speed. Continue, adding the cream of tartar, for one minute. Add the sugar 1 tbsp at a time, whipping for two minutes between.
Gently fold the tapioca into the meringue. Chill and serve.
