PREPARATION OF THIS HEALTHY RECIPE
Preheat over to 325. Peel plantains and separate yolks from egg whites. Add 1TBSP olive oil, 1/4c water and 1/4tsp salt, 1TBSP potato starch.
1. Make a meringue with the egg whites by beating them on high with cream of tartar and sugar. The meringue is ready when stiff peaks form, about 3 minutes.
2. Puree plantain, vanilla, lemon zest, yolks, potato starch, olive oil, water, and salt until very smooth.
3. Carefully fold mixture into the meringue with a spatula until well mixed.
4. Line a pie plate with parchment paper and brush olive oil on the parchment, Pour batter into the pie plate.
5. Back for 40 minutes.
Serve hot with whip cream! Or, cool and add your favorite frosting.

as well as public service work in South Asia.
John's commitment to the detailed study of digestive disorders reflects his zeal to get down to the roots of the problem.
His hope and belief in the capacity of each & every client to improve their quality of life is nothing short of a personal passion.
John's creativity in the kitchen and delight in cooking for others comes from his family oriented upbringing.
In addition to his certification in Ayurveda, John holds a bachelor's degree in mathematics from Harvard University.
