PREPARATION OF THIS HEALTHY RECIPE
Place all ingredients except miso in a pot and boil until carrots are soft. Remove from heat. Take a small amount of broth and mix it with the miso. Pour the miso mixture back into the broth and serve.

Wonderful for lunch or light supper on cold wintery days. If you like less brothy soup, reduce the amount of water or increase amounts of everything else. Next time, I'm going to double the potatoes and carrots.
