PREPARATION OF THIS HEALTHY RECIPE
- Soften butter & preheat oven to 350
- Cream all but 1 tbsp of the butter by whipping it in a stand-mixer. Remember to scrape the sides of the bowl 1/2 through for an even mixture.
- Beat in 2c sugar and all the orange zest from the 6 oranges until the mixture is smooth. Remember to scrape the sides of the bowl and the zest off the mixer 1/2 through for an even mixture.
- With a fork, slightly beat the eggs, juice from the oranges (about 3/4c), vanilla extract and salt. Mixing on medium low speed, pour the egg mixture slowly into the butter mixture. Scrape the sides then mix on high speed for 30 seconds.
- Add the flour, 1/4c at a time, mixing on medium-low speed. Scrape the sides then mix on high speed for 30 seconds until the batter is completely even.
- Grease a tube cake holder with the remaining butter. Sprinkle the remaining sugar around the sides.
- Bake for 90 minutes on 350. Batter is done when a few crumbs still stick to the wooden skewer - ensuring the result is both cooked and not dried out. Note: A toothpick is not long enough to check the status of the pound cake.

This recipe uses 2cups of butter which, I believe, is about 230g!
