How to Make Parsnip Fries with Chipotle Mayo

INGREDIENTS

PREPARATION OF THIS HEALTHY RECIPE

1. Preheat the oven to 450F.

2. Peel parsnips and cut lengthways to resemble a french fry.

3. In a bowl, combine the paprika and ghee and coat the parsnip fries with this mixture.

4. Line a baking tray with parchment paper, and evenly spread out the fries.

5. Bake for 20 minutes, turn and continue to cook for another 20 minutes or until starting to crisp.

6. Meanwhile, whisk together mayonnaise, chipotle chili, and lime juice.

7. Serve as a dipping sauce with freshly cooked parsnip fries.
