PREP TIME: 15 MINUTES
Heat the ghee in a pan and sauté the fennel seeds for 30 seconds. Add remaining ingredients, except mint. Add 1/4c water and bring to a boil until peas are soft. Remove from heat, gently mix in the chopped mint, and serve.
