How to Make Pickled Garlic

INGREDIENTS


SKILL LEVEL: EASY
1 c
40 clove
1 tsp
1 tsp

PREPARATION OF THIS HEALTHY RECIPE

1. Combine and dissolve salt and sugar in the vinegar.

2. Peel and parboil garlic cloves for 30 seconds.

3. Put cloves in a pint sized jar. Optionally, you can add a red chili or other spices.

4. Pour the vinegar solution over the garlic cloves in the jar, completely filling the jar.

5. Seal the jars and store in refrigerator. It will continue to improve over the next month. Garlic will keep, chilled, for at least a year.

Options:

  • Add 1/4 tsp hot sauce to give it a kick
  • Add 1tbsp sugar to make sweet pickle.

This easy to make garlic recipe is an excellent spring cleanse. Garlic pickle is an ideal tonic for January, February, and early spring. Our ancestors survived on pickles and preserves as supplies dwindled into late winter.

The sourness of vinegar and pungency of the garlic cleanses the liver. Garlic's aromatic qualities move stagnant blood. To get the effect, eat 1 clove 1-2x/daily, or take 1tbsp of the juice with meals. We pour the juice over our favorite spring meals in my home, such as Jackfruit Barbecue Tacos, which gives meals a wonderful savory and pungent flavor.

The 6 Tastes

Taste is used to sense the most basic properties and effects of food. Each taste has a specific medicinal effect on your body. Cravings for food with certain tastes indicate your body is craving specific medicinal results from food. Taste is experienced on the tongue and represents your body's reaction to foods. Sweet taste causes physical satisfaction and attraction whereas bitter taste causes discomfort and aversion. Kapha should use less sweet taste while Vata and Pitta would benefit from using more sweet taste. One of the first signs of illness is that your taste and appetite for food changes. The Three Doshas / Body Types

Ayurveda is a metabolic theory of medicine that explains individual health, tendencies, and disease patterns through the concept of doshas, which can be understood as your metabolic patterns and tendencies.

Each dosha reflects a distinct metabolic nature and describes strengths & weaknesses in bodily function, and how these affect energy levels, digestion, susceptibility to disease, and many other tendencies.

“So, my mom hates garlic and loved this dish, which I see as quite a feat. Moving on, I am a bit flustered because I just prepared my pickled garlic, and it is so perfect excep: I forgot to parboil it! Do you think this will be ok? I don't want to waste all the lovely things I added, which include fresh ginger, honey, coriander seeds, oregano lemon, ,and Celtic sea salt."
