How to Make Plantain Yule with Chocolate Chips & Cranberry, Topped with Rosemary Meringue

INGREDIENTS

PREPARATION OF THIS HEALTHY RECIPE

Preheat oven to 350 degrees.

* Heat cranberries, allspice, ginger, and 1/4c sugar into a boil with 1/4c water. Mash with a potato masher as cranberries pop.

* Whip egg whites and cream of tartar in stand mixer while slowly pouring in 1/3c sugar to make a meringue. Stop when peaks are stiff.

* Puree plantains, vanilla extra, cinnamon, oil and 1/8tsp salt in a blender.

* Gently fold plantain puree with 1/2 of the meringue in a large bowl until mix is even.

* Spread on a cookie sheet with parchment paper that has been greased with oil. Bake for 10 minutes at 350 degrees.

* Place a hand towel over the sheet and roll into a yule while hot.

* Meanwhile, drip 4 drops rosemary essential oil in 1 tsp oil. Then fold into the remaining meringue taking care to spread evenly.

* On another cookie sheet and using a pastry bag, design 15 or so 3 inch long meringue strips to place atop yule cross sections (see photo).

* Lower oven heat to 250 and bake slowly until meringue edges are brown. Let cool then lift from parchment paper carefully.

* Unroll the Yule. Sprinkle dark chocolate chips atop the sheet. Spread cranberry jam evenly over the sheet. Roll it back up and slice into 1/2 - 1" long strips.

* Place rosemary meringue strips atop the plantain rolls.

TASTES

The 6 Tastes

Taste is used to sense the most basic properties and effects of food. Each taste has a specific medicinal effect on your body. Cravings for food with certain tastes indicate your body is craving specific medicinal results from food. Taste is experienced on the tongue and represents your body's reaction to foods. Sweet taste causes physical satisfaction and attraction whereas bitter taste causes discomfort and aversion. Kapha should use less sweet taste while Vata and Pitta would benefit from using more sweet taste. One of the first signs of illness is that your taste and appetite for food changes.
