Polenta With Tomatoes & Garlic Sauce


How to Make Polenta with Tomatoes & Garlic Sauce

INGREDIENTS

1 c
2 tbsp
4 whole
3 clove
3 c
2 tbsp
1 whole
1/4 tsp
1/4 tsp

PREPARATION OF THIS HEALTHY RECIPE

1. Use vegetable stock instead of water for best results. Bring water and salt to a boil, then reduce heat to medium. Meanwhile, slice garlic. Heat olive oil in skillet, then add garlic. Sautee garlic for thirty seconds. Remove from heat before garlic starts to brown.

Slowly add corn meal to boiling water, constantly stirring. Remove from heat when corn meal starts to come away from the side of the pan. Mash in the garlic oil, soaking up any extra oil with the cornmeal. Add parsley and pepper. Pour cornmeal into a greased pan and spread out evenly. Let cool and set.

3. Cut the cornmeal into wedges and separate. Chop tomatoes, then season with salt and pepper, and drizzle on top of the corn meal as a garnish. Broil for 4-5 minutes until the edge starts to crisp.
