How to Make Potato & Cauliflower with Tomato & Cumin

PREPARATION OF THIS HEALTHY RECIPE

Fry the onions. Add the garlic. Mix the spices into a paste with water and add to the onions and garlic. Continuing frying for several seconds. Add remaining ingredients and enough water to double the height of the vegetables. Keep in mind that as the vegetables cook the water will evaporate. Bring to a boil then reduce heat till a simmer and cover. Cook until potatoes and cauliflower are soft, about thirty minutes or all afternoon for a deeper flavor! As the vegetables absorb salt you might need to add more for flavor. Garnish with cilantro at the end.

We used to take lunch together in Post Office square or at the Indian restaurant at the food court in Downtown Crossing. One day we ate aloo gobi (the Indian name for this dish) and he began to tell me about the vedas.

TASTES

The 6 Tastes

Taste is used to sense the most basic properties and effects of food. Each taste has a specific medicinal effect on your body. Cravings for food with certain tastes indicate your body is craving specific medicinal results from food. Taste is experienced on the tongue and represents your body's reaction to foods. Sweet taste causes physical satisfaction and attraction whereas bitter taste causes discomfort and aversion. Kapha should use less sweet taste while Vata and Pitta would benefit from using more sweet taste. One of the first signs of illness is that your taste and appetite for food changes. The Three Doshas / Body Types
