Skin potatoes. Put potato, salt, bay leaf, & black pepper in a pot with 1 c water. Steam covered until potatoes are tender. Cut into bite sized chunks and sautee in sunflower oil. Chop thyme and sprinkle over just as potatoes begin to brown. Remove from heat, garnish with lemon juice and mix gently.

I really enjoyed this dish and I added some cooked fresh spinach to the mix that was prepared with tumeric, ginger,black pepper and a little bit of onions and sauteed it. The combination of the potatoes with the spinach balanced it out perfectly for me and was very satisfying! I needed more substance for my lunch and the cooked spinach did the trick! Yum!!
