PREPARATION
Sauteed the chopped onion in the sunflower oil. Add garlic when onions turn clear. Add remaining ingredients. Fill to the top of the vegetables with water. Bring to a boil then lower heat and simmer, covered, until potatoes are soft.

This is very easy to make, and will do so again. I'm always trying to find things I can make my daughter for lunch as she does not eat school lunches. She has been having stomach issues for about 2 years, and there is very little she can eat that does not upset her stomach. This soup was great and she loved it, we had for lunch yesterday, and I packed it up today.. Today I will be making the collard greens potato lemon and tumeric.. thank you, Diane Westover

Hi John - This recipe looks right up my alley! I have a question about the spinach. If it's "heating" then why is it contraindicated for Kapha dosha? [Likewise, why are "cooling" potatoes good for Kapha dosha?]
