How to Make Pumpkin & Kale with Roasted Chestnut, Mushrooms & Chipotle

PREPARATION OF THIS HEALTHY RECIPE

1. Slice a cross hair on the top of each chestnut. Dry roast them in an oven baking pan at 350 degrees. Once the chestnuts start to brown, remove from heat. Watch carefully because the chestnuts will burn easily.

2. Meanwhile, mince and sautee garlic in oil with cumin. Chop pumpkin, and slice the mushrooms. Steam with all spices in 1c water, covered, until pumpkin begins to soften. Then, add the chopped kale and cook for 5 more minutes. Toss in the chestnuts.

3. Remove from heat and serve hot!
