PREPARATION OF THIS HEALTHY RECIPE
Nut cheese must be made a week in advance. Grind the walnuts with the water and salt in a food processor. Let sit for several days until it starts to ferment and smell like cheese.
To make raw vegetable noodles, slice zucchini in quarters. Remove the seeds. Using a vegetable peeler, create long strips the length of the zucchini. Follow the same instructions for the squash, cutting to the desired thickness of the noodle.
Mix the balsamic vinegar, sunflower oil, black pepper and chopped basil with the nut cheese and pour over the noodles. Serve.

Surprisingly easy to digest - I expected gas but instead got ojas. Add a little spices to the nut cheese for true Vata type cold digestion, and a little less vinegar for Pitta. I'm not really sure how to make the walnut cheese. I looked it up on other sites and they mention using a food dehydrator. Could you please elaborate on the cheese making process? Thanks!
