1. Create yogurt and cilantro sauce by blending together with garlic and cayenne and let cool in the fridge.
2. Julienne zucchini, jicama and carrot and finely slice red onion.
3. Combine cumin, paprika, oregano and salt and toss with raw vegetables.
4. Add to taco shell and top with yogurt dressing.
