How to Make Sauteed Arugula & Egg Whites with Thyme, Red Chili & Garlic

PREPARATION OF THIS HEALTHY RECIPE


  1. Heat ½ of the sunflower oil in a saute pan, stove-top, over medium high heat. When hot, add in the garlic and saute until just caramelized.
  2. Next, add the arugula and a half pinch of salt, cooking it until the greens turn limp. Remove this from the pan and set aside.
  3. Turn the heat down to medium and add in the remaining oil. While waiting for the oil to come to temp, whip your egg white with the remaining salt.
  4. When the oil is hot, pour the egg white into the pan and cook until the bottom is firm. Flip and cook for about one more minute on the other side.
  5. Place your egg white on a plate and pile the arugula and garlic on top, finishing with a sprinkling of fresh thyme and red pepper flakes.
  6. Enjoy!
