Sauté onion in oil. Add garlic and sauté another 30 seconds. Add 2c water, along with the salt, sugar, black pepper, chipotle, and chopped butternut squash. Bring to a rolling boil and steam, covered, until tender. Pour off the broth into a small pot and reduce to 1/4c, sweetening it. Add reduced broth back to butternut squash.
