Scrambled Tofu With Asparagus & Parsnip


How to Make Scrambled Tofu with Asparagus & Parsnip

INGREDIENTS

1/4 tsp

PREPARATION OF THIS HEALTHY RECIPE

1. Chop the parsnip into small bite size chunks and steam, covered, until soft in 1/4c liquid.

2. Cut the asparagus into bite sized chunks.

3. Mash the block of tofu with a fork.

4. In a medium skillet warm the coconut oil on medium heat. Sautee the tofu and asparagus until tender. Add the spices and salt and continue sauteeing another 15 seconds.

5. Stir in the parsnip and liquid from steaming. Serve.
