PREPARATION OF THIS HEALTHY RECIPE
1. Soak raw, unsalted cashews in water overnight. The next day, strain and discard the water used for soaking.
2. Add soaked cashews to a high powered blender with 1 cup of fresh water, juice of 1/2 lemon, salt, and pepper. Blend until completely smooth and creamy, and set aside.
3. Warm 1TBSP ghee in a pan on medium to high heat. Slice green onions and saute for 2-3 minutes until translucent. Add crushed garlic and saute for another 30 seconds, removing from heat before garlic starts to brown.
4. Remove onions and garlic from pan and set aside in a bowl. Slice shiitake mushrooms and saute in 1TBSP until mushrooms are soft and browned, about 7 minutes.
5. Reduce to a low heat, pour in cashew cream sauce, add onions and garlic back to pan, and sprinkle with chopped tarragon and thyme. Gently stir together and heat until warmed through.
Suggestion: Serve over roast lamb, steaks, or grilled eggplant.
