PREPARATION OF THIS HEALTHY RECIPE
1. Peel and grate 1 large sweet potato, one medium beet, and one medium carrot. Rinse until water runs clear in a colander and then squeeze out any extra water. Sprinkle salt over the grated roots, and let sit for ten minutes. Drain and squeeze any water that has formed.
2. Chop scallions. Put all vegetables into a large mixing bowl. Crack the egg and add it to the grated root veggies. Add salt, pepper, and mix thoroughly until the sweet potato mix sticks together.
3. Heat coconut oil in a large frying pan. Use a large serving spoon to form hashbrown patties, place in the pan and flatten with a spatula. If they are nice and thin, they will cook faster and all the way through the hard-to-reach middle. Fry undisturbed for 4-5 minutes until browned on one side. When the edges begin to brown, carefully flip the hashbrown. Repeat on the other side.
4. Sprinkle with chopped scallions, an extra dash of black pepper, and serve!

These sound delicious! Does rinsing the veggies remove a lot of the nutrients?

No, rinsing veggies doesn't remove a lot of the nutrients.
These did not hold together in a pattie, so I just cooked them without trying to keep the form. They taste quite good! Next time I will add some herbs.
