SWEET POTATO CONGEE WITH ADZUKI & CHIPOTLE
How to Make Sweet Potato Congee with Adzuki & Chipotle

PREPARATION OF THIS HEALTHY RECIPE
1. If using dry adzuki beans, soak in water for 24 hours. Strain the water used for soaking and rinse the beans. Add to a pot with fresh water and bring to the boil for about 1 hour or until beans are soft. Alternatively, used canned adzuki beans.
2. Preheat oven to 450F.
3. Thoroughly rinse basmati rice in a strainer.
4. Add to a pot of 6 cups of boiling water with mineral salt.
5. Cook on medium for a minimum of 1 hour, or until the rice is completely broken down, stirring occasionally.
6. Meanwhile, peel and cube sweet potato, and coat in sesame oil and cumin.
7. Roast on a baking tray for 45 minutes.
8. A half hour before the congee is done, add adzuki beans. If you add the adzuki too early, they will be mushy.
9. Serve congee in bowls, and top with roast sweet potato.
10. Garnish with green onion and chipotle.
