How to Make Sweet Potato, Daikon, & Goji Berry Miso Soup

PREPARATION OF THIS HEALTHY RECIPE

1. Par boil sweet potato and strain.

2. Meanwhile, press tofu to remove excess moisture and slice into cubes.

3. In a hot pan sautee ginger, garlic, mushrooms, daikon and tofu in toasted sesame oil.

4. Add sweet potato and stir to combine.

5. Add 6 cups water (or vegetable broth), soy sauce and goji berries and allow to simmer until sweet potato soft.

6. Serve and garnish with bean sprouts and sesame seeds
